Does the use of more than 2-3 tbsp of yogurt increase the
probiotic benefits of your homemade yogurt? No.
In fact, Irma Rombauer pointed out in The Joy of Cooking that "you
may wonder why so little starter is used and think that a little more will give
a better result. It won't. The bacillus,
if crowded, gives a sour, watery product." Overall, the result of
homemade yogurt is a milder, subtler tart flavor than store bought yogurt.
Of course, the tartness might increase if you prepare the yogurt using
Greek style guidelines.
I can't find cheesecloth! What do I do?! Believe
it or not, I have a very hard time finding cheesecloth these days. When
you're sleuthing about your local store, be sure to check both the cooking and
craft sections. I often find reasonably priced packages with sewing
notions. If you can't find cheesecloth, there are alternatives.
Some recipes allow the use of a terrycloth towel. I, however, would
rather use a bread cloth from my dishtowel drawer. They are a medium
weave towel that look like this:
The towel is
more dense than the cheesecloth and won't allow as much yogurt to seep through
when you squeeze the towel.
